THE OLIO NOVO
In Tuscany, the arrival of the olio novo is a true ritual — a moment to be celebrated.
Its colour is a vibrant green, and its aroma recalls freshly cut grass, artichoke and green tomato.
On the palate, it is intense and peppery, thanks to its exceptionally high concentration of polyphenols — natural antioxidants that protect the body’s cells and give the oil its bold character and the typical pizzicoria, that pleasant tingling at the back of the throat, a sign of freshness and authenticity.
Rich in vitamin E, monounsaturated fatty acids and delicate volatile aromas that fade over time, olio novo is considered a small seasonal miracle: it lasts only a few weeks in its most vibrant form.
It is best enjoyed simply — drizzled over toasted fettunta with a pinch of salt — to savour its intensity and purity.
