Frollemente has made some delicious mini focaccias to accompany our exquisite patés inspired by traditional Tuscan recipes. An indulgent aperitivo that provides an exciting break from simple flavours when accompanied by a glass of Terre di Pranzano. 

 

 

Ingredients:

500 g flour 

5 g brewer’s yeast 

280 g water 

30 g extra virgin olive oil

10 g salt 

Method: 

  • In the bowl of a stand mixer, add the flour, and the yeast dissolved in water. Start mixing and kneading. When the dough is uniform, add the oil and salt. It is ready when it easily comes away from the bowl. Turn it out onto a pastry board.
  • Let the dough rise until it has doubled in volume. Form small 40 g loaves, place them on a well-oiled baking sheet and leave them to rise again.
  • After the second rising, press the loaves gently with your fingers to flatten them slightly, brush them with the olive oil and sprinkle with a few grains of coarse salt.
  • Bake in an oven preheated to 200°C for about 15–20 minutes or until golden.
