It’s the start of the season when having the oven on is no longer tabù: reason enough to celebrate with a glass of Cabernet Franc in good company. Friends from Frollemente, Lucia and Claudiu, made a fantastic quiche with wine and thyme infused prunes and Montasio cheese. Our Vignamaggio Cabernet Franc was used to flavour the prunes and, of course, to accompany this delicious aperitif, ideal for Sunday brunch at home in good company.

Pastry Ingredients:
300 g flour
130 g cold butter
1 egg
3 g salt

Filling Ingredients:
2 glasses of Vignamaggio Cabernet Franc
10 prunes
300 g Montasio
2 sprigs of thyme
salt

Method:
Blend the butter and sugar in a food processor until a fine bread crumb consistency is obtained. Add the egg and salt, and process to form a uniform mixture.
Turn the mixture out onto some cling wrap, press it flat and wrap it well.
Place it in the fridge to rest for at least an hour.
Meanwhile, infuse the prunes in wine: soak the prunes in a bowl of wine and thyme for an hour and then drain. Cut the cheese into small cubes.
Roll out the pastry base, lay it in a 24 cm pie dish, fill it with the prunes and diced cheese.
Bake for 15 minutes at 180 degrees in a preheated oven. Serve hot as an aperitif.
