Winter is the perfect season to warm up with a delicious homemade dessert and this time we thought we’d make a classic ‘Grandma’s recipe’: Our chef, Cristina’s delicious version of baked apples in Vinsanto.
WHAT WE NEED
4 apples (4 people, one apple each)
125 ml Chianti Classico Vinsanto
4 table spoons raw cane sugar
FOR THE FILLING
20 g pine nuts
10 g raisins
1 tablespoon sugar
1 teaspoon cinnamon
WHAT TO DO
First chop the pine nuts and raisins and then add the sugar and cinnamon to create a crumble that will be the filling for your apples. Meanwhile, preheat the oven to 170 degrees.
Wash the apples and trim the bottom so that they can stand upright. Now slice off the top of the apples, with the stalk intact, and put these little ‘baked apple lids’ aside. Using an apple corer or knife, core the apple without damaging or cutting into the base of your little cup.
Fill your carved-out apples with the crumble of pine nuts, raisins, sugar and cinnamon and close them with the lids you have put aside.
Pour a glass (125ml) of Vinsanto into the base of a casserole dish, lay the apples along the base and sprinkle about one table spoon of sugar over each apple.
Place the dish in the oven and bake for 35 minutes at 170 degrees.
Serve the apples warm with some vanilla ice-cream or whipped cream.
